PopTarts and Fruit


PopTarts and fruit is always a good on the go breakfast!

Beef Stew



Ingredients:
For 8 people: 
4 cups water 
2 lbs. beef cubes 
8 carrots 
4 potatoes cut in fourths
4 onions cut in fourths

Directions:
Pour water into Dutch oven or pot
Heat over fire.
Add beef cubes and cook covered for 20 minutes, stirring every few minutes.
Heat to boiling.
Cut carrots, potatoes, and onion into cubes and add to beef.
Add salt and pepper.

Cook for 20 minutes or until potatoes are soft.

Fish Tacos Serves 4 (double the recipe for more scouts)


Ingredients: (you will need a skillet and a spatula)
1 lb. tilapia filets
(unless you have caught your own fish!)
1 ½ T some kind of oil

1 T seasoning salt
1 ½ C broccoli slaw or just plain slaw
8 flour tortillas
½ C plain yogurt or sour cream (your troop’s choice)
2 small limes

Directions:
Sprinkle season salt on tilapia filets. Sautee tilapia in oil until fish flakes easily—about 8-10 minutes, flipping once. Remove from heat.

To assemble tacos, evenly distribute and layer ingredients on tortillas. Starting with fish, add broccoli slaw, sour cream or yogurt. Squeeze lime juice over all just before eating!

Hot Dogs



Ingredients:
Buns
Pack of hot dogs
Ketchup
(any other toppings your troop likes)
Some kind of chips

Directions:

Find some sticks, skewer your hot dog, and cook over the fire until the hot dog puffs up. Serve with chips and maybe something like baked beans.

Walking Tacos


Ingredients: (you will need a skillet and spatula)
            1 pound ground beef or turkey
             1 (1 ounce) taco seasoning packet (or this homemade taco seasoning)
            6-8 snack sized bags of Fritos or Doritos
            Any toppings you like, but here are some suggestions:
            black beans
            lettuce
            tomato
            shredded cheese
            sour cream
            ranch/salsa mixture (1:1 ratio prepared ranch dressing and your favorite salsa)
Directions:
.     Brown beef or turkey and drain the fat. Add the onion to the meat and sauté a couple of minutes until soft. Add the taco seasoning along with 1/2 cup of water and simmer until water is absorbed. If serving immediate pour in a bowl. You can also combine the meat and black beans if you want and keep them warm in a slow cooker.

.     Crush your chips with your hands and open your bag. Add whatever toppings you desire and eat with a fork as you walk around! You can drizzle it with the ranch/salsa mixture.

Ziploc Omelettes



If you don’t want to do these in baggies, just put all ingredients in a skillet and cook.
You need:
large pot
tongs
huge paperclip
Ziploc baggie for each scout
Ingredients:
2 eggs for each scout
grated cheese
ham bits
salt, pepper, other desired spices.
Directions:
Bring water to boil in large pot.
Crack eggs into Ziploc baggie.
Add ham bits.
Add spices.
Close and shake to mix.
Use paper clip to hold tops of all baggies together so they do not melt on the side of the hot pot.
Place baggies into hot water.
Boil until eggs are firm and cooked.
Open baggie and add grated cheese.

Eat right out of baggie.
